Ingredients:
  • 3 Aurum handles
  • 1 Purple onion
  • 5 limes
  • 1 orange
  • 1 jalapeño or green chili bell pepper
  • Ginger
  • Coriander
  • 400gr shrimp
  • EVOO
  • Salt and Pepper
  • Garlic
  • Cumin
  • Paprika or paprika
  • Skewer sticks
Preparation:
  1. Dice the mangoes and set aside in a bowl.
  2. Chop the cilantro and onions into julienne strips and soak them in salted water.
  3. In a blender, add the juice of the lime and orange along with the jalapeño, ginger and some of the mango cubes.
  4. Strain through a sieve, and add to the bowl with the chopped mango, cilantro and onions (without the water).
  5. For the shrimp: in a bowl season them with cumin, paprika, salt, pepper, coriander and finely chopped garlic, place them on the skewers/sticks.
  6. Cook the skewers on a grill and serve with the mango ceviche.
