1 Aurum Mango
150 g fresh tuna
Mix of red fruits
1/2 purple onion
1 tbsp Jerez vinegar
1 tsp Modena cream
1 tbsp sesame oil
1 tbsp sesame seeds
1 handful of cashews (garnish)
  1. Cut the mango in half, remove the bone and cut it into small squares Reserve in a bowl
  2. Cut the tuna into small cubes and reserve in a bowl
  3. Beat the red fruits with the vinegar, EVOO, sesame oil and cream of Modena, season with salt and pepper and season the tuna. Stir everything very well, cover with plastic wrap and reserve in the refrigerator for about 15 minutes
  4. Cut the onion and add it to the bowl, add a little lemon and olive oil.
  5. Mix with mango
  6. When you need to prepare it, place a ring in the center of a plate and add the mango cut into squares as a base
  7. To finish, add a good layer of tuna on top, sprinkle with cashews and carefully remove the ring. Put a splash of oil around it and accompany the dish with some toast. Let’s eat!
