Ingredients:
2 Aurum avocados
200 grams of rotini pasta
Red and yellow pepper
Parsley
Bacon cubes
1/2 cup of red wine vinegar
2 cloves of garlic
1 tbsp Oregano
1/3 cup water
1 tbsp Basil
Flakes chilli
Salt and Pepper
EVOO
Parmesan cheese flakes
Preparation:
  1. Cut the avocado into small cubes, as well as the peppers.
  2. In a bowl, mix the vinegar, oregano, water, basil, EVOO, chilli flakes, 2 cloves of garlic and finely chopped parsley, salt and pepper.
  3. Cook the pasta following the instructions on the packaging.
  4. Cook the bacon cubes and reserve.
  5. In a salad bowl, mix all the ingredients and dress with the vinaigrette.
