Ingredients:
  • 2 Aurum avocados
  • 250g chicken thighs
  • Lime juice
  • Olive oil
  • Garlic powder
  • Sweet paprika
  • Cumin powder
  • Onion powder
  • Salt
  • Pepper
  • 1 spring onion
  • 2 tomatoes
  • Pancakes
  • Lime wedges
Preparation:
  1. Take some chicken fillets and marinate them in a bowl with lime juice, olive oil, garlic powder, sweet paprika, cumin powder, onion powder, salt, and black pepper. Let it marinate for an hour.
  2. White we prepare the guacamole: Peel the avocados and add them to a mortar and pestle. Mash them, then add a finely chopped spring onion and 2 chopped tomatoes. Once they’re done, add the juice of 1 lime and season with salt to taste. Set aside for plating.
  3. In a very hot pan, cook the fillets and cut them into strips for plating the tacos.
  4. Take the pancakes and sear them lightly in the pan. Add the chicken strips, a little guacamole, and a little rooster’s beak (optional). Use a few lime wedges for garnish.
